Swiss Butchery has been around for several years now and has just recently renovated their outlet at Tanglin, with several new offerings. We were delighted to be invited to taste some of their finest products available in the Singapore market.
Here are some of the key offerings that you can look forward to in their new outlets.
A5 Matsusaka Beef Nicknamed “Queen of Dignity” where only the female cow, grown twice the size of normal cows is slaughtered. Matsusaka beef is the best wagyu in Japan. In fact, it is one of top 3, right after Kobe beef. Swiss Butchery is the only place in Singapore where you can get a grade A5 beef.
Due to its really high content of fat, (which contains a lot of Omega 3 btw!), you barely need to chew on the meat as it melts in your mouth and goes down easy into your stomach. Sinful, but so good and we would eat this anytime!
Meat Aging Service Normally offered in restaurants only, Swiss Butchery is the first retailer that offers a meat aging service to its customers. The service comes free with any purchase of their meats. You can speak with their butcher so that they are able to recommend you what size and cut that will suit your plans.
You can choose to age your meat for 14, 21 and 28 days. The longer you age it, the more you increase the quality of the flavour of the meat as the fats break down over time. Do note that, you expect to lose about 30%-50% of the original weight after aging. Though some may not find aged meat up to their palates, we found that the aged meat just becomes so much more flavourful. Just like fine wine, if done well, aged meat comes with depths of flavour that it picks up during the aging process.
Oyster Bar After their recent renovations, Swiss Butchery has also added an Oyster Bar to their already impressive line-up of services and food. The oysters are air-flown in directly from France every Thursday. So, do give them a call either beforehand to reserve a few pieces and come down on Thursday to enjoy at MomorIzakaya, which their sister outlet, just downstairs from the entrance of the Butchery.

If you're the type of person who enjoys oysters with a little drink, a decent selection is also available here at Swiss Butchery. Do pick up a bottle of their in-house white, Alpha Domus Chardonnay (2014) to pair with the oysters, which is easy going on the palate and surprisingly not dry for a Chardonnay.
