Fuze@Skybar, Traders Hotel

Right before KL went into MCO 2.0, we managed to sneak in a food review at Fuze@Skybar, Traders Hotel. Many would remember this venue for its epic parties back in the day. Today, this vibrant sky bar still offers the best view in the city, now coupled with some of the best bites too.

I would describe the menu at Fuze to be elevated bar food, considering its premium ingredients and creative plating. From it’s pie tee with succulent tiger prawns (RM28) to its seafood dumplings (RM28), these moreish starters can really kickstart your appetite.

Another must try appetiser would be their kaffir lime fish cakes (RM28) which have a very distinct Asian flavour to it that we loved.

If you’re looking for something substantial to go with your mains, we recommend trying their garlic cheese naan (RM28) with lamb tandoori. This dish was packed with flavours and left us salivating with its decadent aftertaste.

For mains, we decided to try their soy-marinated steak (RM108) with soba noodles on the side. The steak was a little on the sweet side for us due to the sauce - so you might want to request the sauce on the side so you can enjoy more of the steak flavours. Though initially I found the soba pairing to be odd, I felt like it gave a good overall balance to the strong flavours of the steak.

My favourite dish for the evening was the rendang beef short ribs (RM58) that came with a smooth mashed potato and some vegetables on the side. I loved how tender and well seasoned the beef short ribs were - the meat just fell of the bone and was cooked beautifully.

Of course, no visit to Skybar is complete without drinks. We tried some of their signature cocktails which are named after women. The Sonia, Jasmine and Nadya (RM36 nett) were delicious gin/tequila based cocktails infused with local flavours like pandan, jasmine and coriander. A must-try here!

Finally, you have to top off your meal with their sublime desserts. The pandan Panna cotta (RM30) is an easy favourite and is their signature dessert, while the vanilla lemongrass Creme brûlée (RM30) is another winner for its balanced flavours and perfect consistency.

The view, of course, is the cherry on top of a wonderful dining experience. We absolutely cannot wait for this MCO to be over so we can visit the place again to try its many other offerings on the extensive menu.
