Presidential delicacies by Chef Huang Ching Biao x JUMBO group @ Zui Yu Xuan Teochew Cuisine

The JUMBO Group of Restaurants has collaborated with renowned Taiwanese Chef Huang Ching Biao to unveil time-honoured presidential recipes and experiences to a new generation of chefs.


Retired Chef Huang has five decades of culinary experience and is known for his explicit culinary skills in Xiang, Chuan as well as Yuan cuisines. He has joined hands with Singapore's JUMBO group of restaurants to pass on his best-kept recipes and skills to carry on his legacy for many generations to come.

Chef Huang has created several new dishes to kickstart the collaboration with the Beef Short Ribs with Asparagus in Red Wine Sauce ($18++ per person) being the first and exclusive dish that will only be available at both Chui Huay Lim Teochew Cuisine and Zui Yu Xuan Teochew Cuisine restaurants. Beef lovers would enjoy this bold and painstakingly prepared dish that features a tender portion of beef short ribs which is first deep-fried, then braised in a mixture of red wine, red yeast rice, garlic and onions.

The next dish is a beautifully presented bowl of Double Boiled Pork Broth in Golden Pumpkin Bowl ($12.80) that comprises of minced pork, water chestnut and an umami-filled dried conpoy that is soaked in a fragrant and rich pork broth.

Furthermore, diners can also look forward to three more new offerings in the first quarter of 2021 specifically crafted by Chef Huang himself. The three dishes include Braised Pig Trotter with Abalone, Longevity Golden Stew and Pan Fried Shrimp Paste and Pomfret Dumpling.


We had the privilege to taste the Pan Fried Shrimp Paste and Pomfret Dumpling which features thinly sliced pork lard wrapped in a fresh shrimp paste, then carefully topped with fresh pomfret fish, and pan fried till a nice, crisp golden brown.


5-course Signature Set Menu


Besides indulging in Chef Huang's exquisite dishes, diners also get to enjoy a fine 5-course Signature Set Menu ($50++). These consist of classic Teochew favourites that will only be available for dinner from 5.30pm to 10pm (Last order: 9.15pm) till the 17th of January 2021.


The reasonably priced 5-course set menu (min. 2 to dine) allows diners to pick various dishes from the following categories: 3 items from a list of tantalising appetizers, and 1 item each from the meat, seafood, vegetable and main sections respectively. Additionally, all diners seated at the same table will receive the same appetisers, meat, vegetables and main with each respective diner only being able to choose their own Seafood course.


The set menu is not valid with other promotions, discounts, vouchers and JUMBO Rewards privileges unless stated otherwise.

You have 3 appetisers to start with, such as these classic Teochew must-haves: Crispy Deep Fried "Ngoh Hiang", Pig Trotter Terrine or Deep Fried Homemade Puning Beancurd.

Begin your entrée from the meat section, like this succulent and juicy Pan Fried Kurobuta Pork Cutlet served with a side of acar. Do also expect classic Teochew favourites such as the Braised Duck and Crispy Pork Rib Marinated in Plum Sauce among the meat options available.

Seafood lovers would love the option of either a Live Boston Lobster Wok baked with Fermented Bean and Garlic (Halved) or a lighter option of a classic Teochew Steamed Threadfin Tail.

I had the opportunity to savour one out of the three vegetable selections offered, the Home-made Vegetable Skin Beancurd Braised with Crab Meat. This dish happens to be my personal favourite. The beancurd was smooth in texture, laced over a velvety and flavourful crab meat sauce. Both paired very well together.

The last course was a generous serving of Wok Fried Kway Teow with Diced Kai Lan and Preserved Radish. The kway teow had a strong yet pleasant "wok hey" char, with a nice bite from the fibre-rich kai lan and the subtle saltiness from the preserved radish.
