MasterChef Zander Ng x The Clifford Pier @ The Fullerton Bay Hotel

Singapore's very own MasterChef Zander Ng has collaborated with The Fullerton Bay Hotel culinary team to showcase his contemporary innovations from now till the 26th January 2019. His menu pays homage to his roots growing up in an Australian - Singaporean family. Expect his dished to have a combination of rich and diverse flavours. We were extremely excited to taste the four-course set dinner menu priced at S$79 per pax.

The grand entrance of The Pier Restaurant was beaming with sophistication and class. The environment had a sense of peace and tranquil in the vastly spread out dining room.

We started off with the Scallop Carpaccio dressed with coconut milk, kaffir lime, lemongrass and fried garlic chips. This was certainly refreshing and a clever Asian twist on a carpaccio.

Next we moved on to the Har Cheong Calamari coated with Sarawak White Pepper and served with a calamansi aioli on the side, which was a perfect sauce for this dish. The prawn paste batter definitely gave this dish a very homely feel.

Moving on to the mains. This is a Cider-Brined Korobuta Pork Chop with plum sauce, sunchoke and holy basil to dress it on the top. Personally, this was a little to dry for my liking but definitely a hearty dish that's good for someone super hungry.

If pork isn't your thing, you might want to go for the Beef Tagliata dressed with chinkiang vinegar, olive oil and a radicchio salad. This was absolutely stunning! The meat was extremely tender and the flavours balanced really well. I would dare say this was one of the best dishes of the night.

Think of your old school cakes that are made in your typical Aussie local bakery or a similar version of what your grandma makes for afternoon tea but even better! This is a Kumquat Polenta Cake with salted caramel, marmalade glaze and with a ginger milk ice-cream on the side. Absolutely stunning and a clever twist on a classic cake.

Or you could choose to end your meal with the Sticky Date Pudding infused with Chinese five-spice, sea salt toffee and vanilla ice cream. This dessert made me feel all warm and fuzzy inside that it reminded me of a time when I was sitting by the fireplace during winter in Australia with a glass of red after dinner.
