Executive Set Lunch and Tasting Menus @ Jumbo Signatures, Marina Bay Sands

JUMBO Signatures – the first-ever flagship premium dining concept of JUMBO Group, is taking your dining experience to greater heights. With an intricate and meticulously crafted menu that will suit tastebuds of all kinds, one can definitely be in for a memorable dining experience. JUMBO Signatures has launched a trio of Signature Menus that suit occasions of many – The Signature Tasting Menu, The Signatures Ala-Carte menu, and The Executive Set Lunch Menu.


Embark on a remarkable culinary experience with the best of JUMBO Signatures's offering with The Signature Tasting Menu. Not only does the tasting menu refreshes every few months, but it also consists of an intricate eight-course meal with two surprise addition, with premium wine pairing options available.


Furthermore, anticipate the best of Singapore delicacies with The Signatures Ala-Carte Menu which features some of JUMBO's best-selling and classic dishes from nutritious soup, meat, vegetables and live seafood which definitely makes the perfect option for sharing so you can have a taste of a wide-variety of JUMBO's tantalising offerings.


The Executive Set Lunch priced at an affordable $58 per person for 3-course and $62 for 4-course offers a tasty selection of choices that is perfect for business meetings or quick luncheons with your overseas guest.


We had the honour of having The Signature 8-course Tasting Menu with premium wine pairing (+$118), and started our course meal with a refreshing welcome drink featuring a glass of Nicolas Feuillatte Reserve Exclusive Brut NV.

We kickstarted with a light-bodied Pascal Jolivet Sancerre Blanc to pair our trio of starters comprising Chilled Hand-Shredded Live Australian Lobster with Fruit Salad in Sesame Dressing, deep-friend golden brown Shelled Prawns covered with umami-packed Seaweed and Pork Floss, and lastly, Scallop Wrapped in Yam Ring which uses yam harvested from Thailand for its sweet and mild nutty taste and ever-smooth creamy texture.

On to the next course was a nutritious and quintessential Collagen Broth with Fish Maw and Bamboo Pith. This rich and hearty Collagen broth is boiled for several hours to obtain its rich and creamy notes and is incorporated with protein-rich Fish Maw that has been boiled down till it has absorbed all the goodness from the collagen broth, leaving it with a smooth and silken texture, and then combined with Bamboo Pith and goji berries for an added tinge of sweetness.

For the main course, choose from 5 varieties of meat or seafood options – For the ultimate JUMBO experience (without getting your hands dirty), opt for their award-winning Chilli Crab Meat Sauce (+$20 to enjoy Chilli Mud Crab Pincer or +$10 for the body) that uses a blend of over 10 Southeast Asian spices including chilli, turmeric, lemongrass, candlenut and ‘TauCheo' – And no chilli crab experience is complete without soaking up the goodness of the crab meat sauce with freshly deep-fried fluffy mantou bun that is served alongside the crab dish.

For the pescatarians or fish lovers, we'd recommend their luxe and beautifully steamed Cod Fish topped with Preserved Radish and Diced Chilli. Complementing this duo of seafood options is a glass of aromatic Domaine Weinbach Riesling Cuvee ‘Colette’ which has an aromatic flow onto the palate where more lemon notes unfold.

For someone who doesn't eat lamb, I must say, the Chef has outdone the Pan-Fried Lamb Chop and Foie Gras with Pepper Sauce – No gamey scent and each piece of sliced meat had a beautiful melt-in-your-mouth texture and is served with a side of salad that helped balance the greasiness from the lamb. The dish was perfectly paired with a glass of Château Preuillac Médoc that encompasses a rich, full-bodied structure and balanced wood-ageing flavours.

A meticulously crafted dish indeed for the next course is the Sliced Luffa Melon in Collagen Soup – painstakingly sliced luffa melon replicating strings of noodles is lightly blanched and placed on a bed of crispy rice noodles and topped with fried shredded conpoy, Sakura Ebi and shredded "Jin Hua".

The next course comprises carb-filled options. This is where guests can choose from either light and comforting Sliced Abalone with Udon (+32 ) or a hearty and wholesome 'Yuan Yang' Fried Rice With Cod Fish and Fresh Mushroom for a heavier option. Pair these dishes with a medium-bodied and subtly dry Louis Latour Chablis AC French wine that shows perfumed, lively, clean and steely-tasting notes with a crisp finish.

Last but not least, end off the 8-course meal on a sweet note with their ‘Cheng Teng’ Bird’s Nest and Peach Resin (Cold/ Hot ) (+28). A classic and iconic Singaporean dessert that has been elevated with the use of premium ingredients such as birds' nests and peach resin for added nutrition.

Besides the wonderful dishes available on their tasting menus, guests should not miss out on some of their stellar dishes such as the Signature Fragrant Rice in Rich Seafood Broth ($38). Served in a hot stone bowl, fluffy jasmine rice is topped generously with freshly hand-shelled crabmeat, Sakura prawn and sashimi-grade Botan Ebi. After which, an umami-rich prawn broth rendered by simmering prawn stock for several hours is poured over. Furthermore, enjoy your dish with a lightly fried crispy Botan Ebi prawn head that has been seasoned with salt and pepper for an extra kick!

If you still have the space for dessert, we'd highly recommend their in-house-made Durian Tart ($14) to share that uses handmade durian pureé paired with rich and fragrant coconut ice cream and Pandan sauce. Fret not if you are thinking it will be on the heavier side, as it was well light on the palate and was definitely still enjoyable after the end of our course meal.
