Chachara, Seminyak Bali
When you visit Bali, you don't expect to eat Spanish food and have it be the best damn Spanish meal you've ever had in your life. But that's exactly what happened when we visited Chachara in Seminyak.

First of all, I just have to say, I am so impressed with all the effort gone into turning Chachara into the perfect little hidden chill out spot right in the heart of Seminyak. I love the interior and the way they have done up the place.

We chose to sit outdoors, facing the cute combi van, under the twinkly fairy lights. It's such a romantic atmosphere. It's a great place for a casual date and we're sure your date would be so impressed with the food here.

Not only that, you might also get a little buzzed with their cocktails here too. We started off with a Mai Tai, a Passiontini and a Southeast Asian smash. This got us a little happy and ready to sink our teeth into Chachara's impressive offerings.

We started off with smoked pork loin (YASSSS). Whether or not you choose to eat this with bread, it's great either way. But it was just a precursor to amazing meal we were about to experience.

One of the first few dishes we tried, which was also incredibly mind-blowing was the Salmon TNT. Why do they call it TNT? Because it was EXPLODE in your mouth with flavours of salmon and truffle. The most perfect combination in the history of mankind.

Next, we had the semi cooked tuna with gazpacho. As I have mentioned in many of my reviews, I am not a fan of raw/half cooked fish, but Balinese chefs are experts in what they do and they allowed me to appreciate the fish in all of its glory.

I was also hesitant to try the salmon avocado salad, but after a bite, I was hooked. This dish is a highly recommended salad to try if you love salads!

If you're a fan of avocados, then you will love the avocado baguettes. The baguettes are not your typical baguettes and resemble something I can only describe as crackers because they're so crispy.

Onto mains, we tried their grilled chicken with artichokes. We were impressed at how juice the grilled chicken was, and so packed full of flavours.

But the true star of the entire show had to be the paella here at Chachara. If this chicken paella were to be the last thing I taste on earth, I would die a happy, happy woman. There's no doubt that this was the best paella any of us had ever tried (and 2 out of 3 of us had actually been to Spain and eaten paella there). Here's a tip: get extra aioli to eat this with because IT IS SO WORTH IT.

Finally, for dessert, we had a mixed dessert craziness - which is the description of the dish in the menu, and how accurate that is! You get a cornucopia of various desserts from chocolate truffles to berries and bits and pieces of other sweet treats. All worth a taste. Great for sharing!

To cap off our meal, we had more cocktails - namely a coffee & cigarette, plenty of berries and a Jamu Gin. I was most curious about Jamu Gin because it's a mix of kombucha (which already contains trace amounts of alcohol) and my favourite alcohol - gin. Of course, it was amazing. Much like all the cocktails here.

Will we be back here again? I think that's a resounding YES. We would not hesitate to be back here again - especially for that unforgettable paella.
