ATLAS Grand Lobby & Bar, Singapore

This August, be in for a treat at ATLAS Grand Lobby & Bar as it introduces its new executive menu, which includes six new dishes cooked up by Executive Chef Daniele Sperindio.

With a choice between two or three courses ($38 and $48 respectively), and an option to include a wine pairing (additional $24 for two glasses; $30 for three glasses), the ATLAS Executive Lunch is thoughtfully conceived and is perfect for a business lunch, or for those looking for an oasis from the hustle and bustle of Singapore.

For starters, the Tomato season, buffalo mozzarella, horseradish, butterhead showcases juicy and bright heirloom tomatoes from Chef Daniele’s Italian homeland, and are prepared in a variety of methods – slow cooked, poached, and flash fried.

Be comforted by the Passata of white onion, chicken supreme, tarragon, served with sous vide cooked chicken supreme, a creamy soup made of earthy white onions and chicken stock.

Another selection is the Cured salmon carpaccio, haricot verts, grape seed mustard, made with cured Norwegian salmon, topped up with a preserved Amalfi lemon dressing. This tangy and refreshing starter is served with a salad of herbs like cresses, tarragon, and chervil.

As for the mains, sink your teeth into Homemade orecchiette pasta, summer vegetables, feta cheese. Orecchiette refers to “little ears” (for their ear-like shape), a traditional home-made pasta from Puglia, Italy made of semolina flour and water.

If you’re feeling for something with more meat, try out the Fork tender beef cheek, stuffed friggitelli peppers, potato espuma. The beef cheek from beef cheek from Australia is cooked in a sous-vide method and falls apart with a nudge of the fork, remaining true to its name.

Bringing in some French influences, Chef Daniele introduces the Creamy bouillabaisse, black cod chunks, brioche bread. The savory soup, originally from Provence, France, contains black cod that is flashseared, venus clams and squid, with a side of French confit ratte potatoes.

To finish off your meal with a sweet ending, choose between the Pear snow, brandy sabayon, stretchable chocolate, pistachio sponge, Frozen milk chocolate water, milk ice cream, palmer’s brownie, tarragon, or Crêpes mille-feuille, strawberries two ways, milk crisp from the a la carte desserts selection.
