Ah Mah Homemade Cake: Castella Cake in Singapore

One of my first experiences with the Castella cake, despite its origins from Japan, was in Korea. It was the dead of winter and we were walking around a largely deserted Ewha's Women's University. A little stall, one of those hole-in-the-walls you would likely walk past, grabbed our attention because of the smell wafting out of it. We bought two castella cakes, freshly baked and indulged in it. Since then, of course, the cake has made its way to our part of the world. Landing in Malaysia, the popular Castella cake quickly took off with the brand, Ah Mah Homemade Cake.

Today, they have sold over 100,000 boxes of their famous cake and the queue could go up to 2 hours. But I can tell you that it is worth the wait. Especially if you love cheese flavoured cakes.

The Cheese flavoured Castella Cake in Singapore

There are currently two flavours to choose from; Original ($8) and Cheese ($11). This fluffy egg sponge cake is purely made out of eggs, milk, and flour. No butter!

We got a little sneak peek on how the cake was made, and here's some behind the scenes for you.

They layer the cake with layers of cheese and batter over to create a cheesy taste to every bite!
