Basilico's Seasonal Menu at Regent Hotel Singapore


Basilico presents their all new summer and autumn dinner menus!

As the season changes in Italy, Head Chef Luca Beccalli brings the change into his restaurant, affording us the privilege to try out different seasonal dishes. Basilico offers both á la carte and buffet options, which can seat up to 200 guests (indoor, including two private dining rooms which can seat up to 10 guests each).

Basilico has launched their year-long "Flavour of the Seasons" Basilissimo dinner series, from Winter dishes (January - March), and from June 20th, we get to try the Summer specials! After which, you'll get to try Autumn, from September 26th to January 1st.

Tavolo Degli Antipasti is a buffet spread which includes cold cuts, marinated seafood and vegetables, and also seasonal leaves and cheeses. As a cheese lover, it was heaven for me as there was a wide range to choose from. The best part was there was a chef there who readily explained, recommended and served the cheese to us!

During the tasting, however, it was a sit-down session. The first dish served to us was the Risotto al Piselli e Maggiorana con Baccala Mantecato (Summer); which is basically green peas and Marjoram Risotto with cured cod fish cream and Taggiasche Olive Powder. In my opinion, the taste of the green pea & marjoram came off a little too strong, but otherwise hit the mark with texture for the fish and rice.

We also sampled the Gnocchi alle Castagne al Burro e Salvia (Autumn), a chestnut Gnocchi sauteéd in butter and Sage, served with the most fragrant pumpkin Veloute, Shredded Duck Leg and garnished with shredded winter black truffles. The texture for the gnocchi was so smooth and the portion was just right. If you're a fan of gnocchi, this is a dish you wouldn't want to miss!

Then, we tried the Pentolone di Pesce (Summer), a big pot which had Octopus, prawns, Salmon and Clams cooked over Legume Ragout and topped with Pizza dough. Seafood lovers, this is your slice of heaven right here! This dish is sizeable, suitable to share between 2-3 pax. The salmon was very good, not overcooked and very tasty. Overall, a well executed dish.

Another dish which is suitable for a family-style dish would be the Brasato di Manzo Wagyu al Barolo ( Autumn). Also served in a big pot, this dish consists of a slow-cooked Wagyu Beef Brisket in Barolo Wine paired with Soft Polenta and Caramelised Poached Pear. The beef was very tender, but we felt that the taste of the wine could be a tad stronger.

For desserts, we tried the Budino ai Fruitti di Bosco (Summer), vanilla pudding with wild berries compote, which definitely epitomises a summer dish! We also got a taste of the Crostata di Pere (Autumn), a vanilla-spiced caramel pear tart, which wasn't too sweet and was a good way to end the meal.
